Bacon Fried Rice

No sure what to do with that leftover rice in your fridge? Well there are several things you could use it in I suppose; soups, rice pudding… but my favorite lately is fried rice!

Fried rice is such a simple way to make a meal while cleaning out the fridge and using up leftovers! Start with some bacon and use the bacon fat to fry onions, garlic and whatever your heart desires to eat with your rice….. have some leftover chicken? pork chop? zucchini? eggplant? pork tenderloin? steak? whatever it is cut it up and throw it in! Below is a basic list of things you should start your rice with:

1/3 cup vegetable oil
2 eggs, lightly beaten
1 small red onion, finely diced
1 clove garlic finely diced
2 tablespoons light soy sauce
1 teaspoon rice wine vinegar
1/4 teaspoon sesame oil
4 cups steamed rice

the above serves as a base ingredient list. you can substitute anything there. in addition throw in whatever meat, chicken or veggies you want to add! i usually use about a cup or so of meat. (In this case I used 6 slices of bacon)

Cook bacon in a hot wok until crispy and set aside. Heat wok until surface seems to shimmer slightly. Pour beaten eggs into wok and let them cook in the bottom until just starting to cook through like an omelette, then scramble it for about 1 minute or until almost cooked through. Remove egg from pan and set aside with the bacon for later.

Add 1/4 cup oil in hot wok and stir-fry onion and garlic for until onion is starting to get translucent. Now this is when you would add your leftover or fresh meat) and stir-fry until starting to get cooked or heated through. Then add whatever veggies you want and cook until just starting to brown (about 1-2 minutes); test with a fork. Stir in soy sauce, vinegar, and sesame oil and cook for about 1 minute. Toss in rice, egg and crumbled bacon and stir-fry, using a spatula to break up the egg into smaller pieces. At this point your dish is about finished, if you want to add other fresh herbs (basil, mint, etc) do that and stir-fry for a further 30 seconds or until well combined and rice is heated through.

You can top it with a little basil leaf or just dig in!
